  1. Not too sure about it but what I expect from a chiller is that,
    1. Sensor in the chiller turns on the chiller when water temperature exceeds preset temperature.
    2. Sensors will shut off chilling when water temperature reached preset temperature +- 1 degree.
    3. Temperature sensor is located inside chiller = stagnant water in chiller reaches desired temperature, chiller would not be lowering the water temperature thus not freezing over damaging anything.

    But if you are using an external temperature probe to regulate chiller to turn on/off, then it’s a different story.
