What's the best way to fill out my Eheim 2217?

I'm using this Eheim 2217 for my new 100 gal tank (one month over old) and need some recommendations of what's the best way to fill it out.

I currently have the following inside (from bottom to top): 3 coarse filter pads, Rowa Phos (in filter bag), Reefez Carbon Plus (in filter bag), 1 fine filter pad, and 1 black carbon filter pad.

I read on ReefCentral that it's best to take out the filter pads to avoid nitrate building. Is this true?

I'm also thinking to add 1 litre of Seachem Matrix at the bottom of the canister filter. Do you think it's good or bad?
