to make your tank look nicer and neater. some hoods are deep enough to be able for lighting fixture to be 'hidden' inside it.

gives an overall aesthetic look to it. other than that no very limited functional purpose

Functionally, if it is a covered hood, it could help prevent fishes from jumping out.
